Au Gratin Peas

Something different to do with frozen peas.


  • 1 sml. onion
  • 2 tbs. butter
  • 2 tbs. spelt flour
  • 1 c. milk, raw or organic
  • 3 c. frozen baby peas
  • 1/2 c. breadcrumbs, made from gluten-free bread
  • 2 c. sharp cheddar cheese


Melt butter in a skillet, saute onion till tender. Sprinkle with flour and stir a few moments, to get rid of the raw flour taste. Add cold milk & stir until thickened. You may need to add more milk or flour to get desired creamy consistiency. Place peas in a lightly greased baking dish, pour onion/milk mixture over peas. Sprinkle with bread crumbs and cheese. Bake at 350 for 30 - 35 minutes.
