A great creamy spinach side dish that compliments any protein. Great with salmon.
Steam the spinach until wilted then coarsely chop. Add coconut oil to cast iron pan on medium heat and saute chopped onion until soft. Add minced garlic. Once you can smell the garlic, add the spinach and season with salt and pepper to taste. Saute until nicely blended. Add the arrowroot powder, stir well for 1 minute. Add the milk and bring to a boil then reduce to simmer. Allow flavors to blend approximately 10 minutes, stirring occasionally. Serve and enjoy!
