Preheat the oven to 180 degrees. Into a bowl, Finely grate the rind from one lemon (the yellow skin only, the white pith can be bitter) Juice the lemon after grating. Add the olive & coconut oils, crushed garlic, dill & salt and pepper, into the bowl with the lemon juice and rind and mix together. Wash the Atlantic Salmon fillits. The 160-180g fillets will cook down to approx 150g (5 protein serves). Use the mixture as a rub and full coat the Salmon, pouring any remaining mixture over the fillets. Place on a baking tray and once the oven is hot enough, place in the oven set your timer for 9 minutes. While the Salmon is cooking wash and prepare your veggies or make a lovely fresh garden salad, whatever you feel like haveing with your Salmon. When the timer goes off turn the oven up to 200 degrees and set the alarm again for 3 mins (12 min cooking time all up) There is no need to turn the Salmon over. It ends up with a lovely crispy top. Serve with a fresh garden salad or steamed or baked veggies & a slice of lemon. Enjoy!
