My favorite chicken soup, quick n'easy. 15 PROTEIN, 3 CARB which is 3 portions.
Choose organic chicken legs, leek, celery, and baby carrots. Use filtered water. I have a bag of leek pieces in my freezer, and a container of celery pieces, and bags of baby carrots in my fridge. This saves me time when cooking.
Place 3 C water in pot. Place 1 C leek, 1 C celery, and 6 chicken legs in pot. Put salt in water, 1 tsp or less. Boil up and let simmer for 20 min. Put pepper to taste and 2 C carrots into soup and boil up. If you need soup right away, cook soup for another 5-8 min, depending on how firm you like the carrots. If soup is for later, just turn the heat off when you have given the carrots a boil up, and they will go tender by them selves over the next couple of hours.
1 medium chicken leg contains 2.5 oz meat, so it is really easy to measure the servings. Just use a 1C scoop for the vegetables to get your carb servings right. Of course you can add anyting you like to the soup to make it more or less elaborate, but this simple and easy version works well enough in my kitchen!
