**Start this recipe 1 day before serving.
Walnut pastry: Combine ground walnuts and dates (pitted and chopped) in the bowl of a food processor; blend until combined. Remove bowl from food processor. Knead mixture together to form a ball. Using slightly wet hands, spread the mixture into an 8-inch pie plate. Stick it in the refrigerator overnight to let it harden.
Filling: Peel, core, and slice the apples into 1/4-inch thick pieces. Combine apple slices, raisins, lemon juice, honey, and cinnamon in a saucepan. Let simmer until apples are tender. Move mixture to a bowl and refrigerate.
The next day: Spoon apple filling into walnut pastry base and serve!
