Crispy Quinoa Cookies

A gluten-free recipe for yummy quinoa cookies!


  • 1/2 c. honey, raw, unfiltered, organic
  • 1/2 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1/2 c. nut butter, any kind, organic
  • 1/2 tsp. vanilla extract, organic
  • 1 c. flour, brown rice, organic
  • 3/4 c. quinoa flakes, organic
  • 1/4 tsp. baking soda, pure
  • 1/4 tsp. sea salt, unrefined and pure
  • 1/2 c. nuts, chopped, your favorite, organic


Preheat oven to 350°F. Line a baking sheet with parchment paper.

Beat together honey, butter, nut butter, and vanilla in a medium sized bowl until creamy.

Combine rice flour, quinoa flakes, baking soda, and salt in a small bowl.

Add to honey mixture and beat until well blended. Stir in nuts if desired.

Drop round teaspoon sized portions about 2 inches apart onto baking sheet.

Bake for 12-15 minutes or until light golden brown. Cool for 1 minute before removing from cookie sheet.
