Who said a diet lunch was boring? Try this salad - as beautiful to look at as it is to eat!
Dice chicken and combine with basil, mustard, and white balsamic vinegar. Set aside.
Toss lettuce with mixed vegetables (carrots, cucumbers, peppers, etc.). Add oil and balsamic vinegar, and toss well. Season with a little salt and pepper. Transfer to a large plate and mound the chicken in the center. Sprinkle with remaining basil and toss on the diced avocado. Surround edges with fresh blueberries.
