Healthy spaghetti bolognese - nice and spicy!
Heat 1 tablespoon of coconut oil in a skillet over medium heat. Add the minced garlic, chopped onion, Italian herbs, and diced chili peppers. Cook for 2 minutes. Add the ground beef to the herbs, and cook until brown. Add the tomatoes, bring to a boil, and let simmer for 20 minutes.
Meanwhile, make the zucchini spaghetti: The easiest way to do this is using a spiralizer, but you can also make “noodles” using a julienne peeler or a mandolin slicer. When the sauce is just about done, heat the remaining tablespoon of coconut oil in a skillet over medium-high heat. Add the zucchini noodles and cook, stirring occasionally, until the noodles are hot (this should only take a minute or two).
Serve the sauce on top of the noodles and enjoy!
