An easy side to go with any meal! Citrus gives this dish an extra zing.
Preheat oven to 425°F. In a medium bowl, toss cauliflower florets with about half of the olive oil. Season generously with sea salt and fresh ground black pepper.
Arrange in a single layer on a rimmed baking sheet, and roast until tender and slightly browned in spots (about 15 minutes). Remove from oven and let cool about 5 minutes.
Return cauliflower to bowl and add roughly chopped parsley, crumbled feta cheese, remaining olive oil, and lemon juice.
Toss gently to coat and season to taste with additional sea salt and fresh ground black pepper.
This side dish may be served warm or at room temperature.
