I find this recipe is best when made early in day and flavors are allowed to mellow in refrigerator for several hours.
Thinly slice cucumbers. In a large glass bowl, combine cucumber slices, lime juice (or lemon juice), and Greek yogurt. Season to taste with sea salt and fresh ground pepper. Stir gently to combine and refrigerate until ready to serve.
