This is a wonderful and easy way to fix zuchinni!
2 tbsp. coconut oil
2 med. zucchini
2 egg
1 c. brown rice flour
sea salt & black pepper to taste
Grate the zucchinis into a bowl, add beaten eggs, celtic sea salt and pepper, stir mixture, add enough rice flour to make a batter. Melt coconut oil in skillet, drop by 1/2 measuring cup of the batter in the hot oil, brown on one side flip and brown on the other. After cooking I like to drain on a cotton napkin, or paper towels. These are yummy with homemade marinara sauce, and they are also good with a dollop of greek yogurt. Enjoy!
