Skip the gluten-filled pasta, and try this veggie version!
1 med. zucchini
1/2 c. cherry tomato
2 tsp. coconut oil
sea salt & black pepper to taste
Peel zucchini using a julienne peeler, or create “noodles” using a spiralizer. Heat oil in a skillet over medium heat. Add "noodles" and halved cherry tomatoes, and cook until heated through. Season with sea salt and pepper.
