Ditch the fried potatoes and try these baked zucchini fries instead!
1 c. almond flour
1/4 c. parmesan cheese
1 tsp. sea salt
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. dried oregano
3 med. zucchini
2 egg
Preheat oven to 425º F. Line a baking sheet with parchment paper.
Cut zucchini in thirds lengthwise, and then cut each third into thirds lengthwise. You will end up with 9 sticks from each zucchini (27 sticks total).
Combine almond meal, grated Parmesan, sea salt, pepper, garlic, and oregano in a bowl. Whisk the eggs in another bowl.
Dip each zucchini stick in the egg and coat well with almond meal mixture.
Arrange sticks in a single layer on baking sheet. Bake for 12-15 minutes, turning halfway through.
