You need a dehydrator for this recipe. A good way to get your veggies in as a snack and a easy way to get your kids to eat their zucchini!
5 c. zucchini
3 tbsp. coconut oil
1 tsp. sea salt
1 dsh. seasoning or spices of your liking
Wash zucchini and cut off ends. Slice zucchini easiest way for you. I use a food processor or mandolin slicer to get the slices even.
Place zucchini in a bowl. Add oil and toss with hands to coat evenly so sliced don't stick together. Add spices and toss.
Place in a dehydrator in a single layer. Dehydrating time depends on your machine and how thick your zucchini slices are cut. I put mine on in the evening and by morning they are done!
They will shrink down a lot so divide into 5 piles and you will have one carb per serving. My dehydrator will only hold about 5 cups so adjust depending on your machines capacity.
