Gluten-free almond flour zucchini bread
1 1/2 c. almond flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. sea salt
3 egg
1/4 c. honey, raw
1 med. banana
1 c. zucchini
Preheat oven to 350ºF. Grease a loaf pan.
In a small bowl, combine almond flour, cinnamon, baking soda, and sea salt.
In a large bowl, combine eggs, honey, and mashed banana. Mix very well. Add the shredded zucchini and mix well.
Add the dry ingredients to the wet ingredients a little at a time, stirring constantly until batter is fully mixed.
Transfer batter to loaf pan, and bake for 35-40 minutes, until a knife or toothpick inserted in the middle comes out clean.
