This recipe makes a yummy and health appetizer.
1 c. zucchini
1 egg
1/4 yellow onion
1/4 c. cheese, any type
1/4 c. breadcrumbs, made from sprouted whole-grain bread
sea salt & black pepper to taste
Preheat oven to 400°F. Grease a muffin tin (very lightly) with coconut or olive oil, then set aside.
Grate the zucchini (about 1 medium). Then, set the grated zucchini on paper towels and set aside for 10 minutes to soak up all the water in the zucchini. (Note: skipping this step will result in soggy centers.)
Combine the egg, diced onion, shredded cheese, bread crumbs, grated zucchini, salt, and pepper all together in a bowl. Mix well.
Using a spoon, scoop the mix into the muffin tins (about 1/2 way for larger tin cups or to the top for mini-muffin cups).
Place in the pre-heated oven and bake for 18-22 minutes, or until golden brown on top and somewhat crispy.
