These bites are a great way to creatively incorporate vegetables and protein into a party appetizer. Vegetable trays are delicious, but for those who aren’t huge vegetable fans (yet), they might give this delicious recipe a try!
2 med. zucchini
2 pce. uncured bacon
1/2 white onion
2 egg
1/4 c. coconut flour
1/2 tsp. ground cumin
1 tsp. paprika
sea salt & black pepper to taste
Preheat oven to 375ºF and line baking sheet with parchment paper. Bake bacon for 10-15 minutes.
Grate zucchini and squeeze out excess water using a nut milk bag or tea towel. Dice cooked bacon and chop onion. Mix grated zucchini, diced bacon, chopped onion, and eggs in a bowl and until thoroughly combined. Sift in coconut flour and mix. Add spices and mix.
Mold mixture into 11-12 bite-sized balls using hands or a small ice scream scoop. Place the bites on a baking sheet; bake for 25 minutes or until golden brown. One serving is three Zucchini Bacon Bites.
