Quick and easy lunch that includes all protein, carbs and oils for mixed type.
1 lrg. zucchini
Steam diced sweet potato until just tender but not mushy or roast in oven for extra flavour. In a frying pan saute sliced leeks in olive oil, then add zucchini and brown slightly. Fold through lightly beat eggs a cottage cheese and sweet potato. Cook on low heat for 10 - 15 minutes, until firm, then grill/broil until golden.
