This raw, vegan friendly version of Alfredo sauce is simply delicious! I didn't fill out the carbs & proteins stuff, or how many servings because I don't know. I ate the whole zucchini and about a 1/2 cup of the sauce.
2 c. cashews
1 lemon
1 c. water
1 clove garlic
1 tbsp. brown rice flour
1 tsp. sea salt
black pepper to taste
1 zucchini
Put 2 cups of raw cashews (soaked in water for 1/2 hour and then strained) in with all ingredients except for the zucchini into a blender (I used a vita-mix) and blend on high until it's smooth and creamy texture. The vita-mix is nice because you can leave it running and the sauce will heat up, but not necessarily cook. Pour over shredded zucchini and serve. About 1/2 cup of sauce is good for one zucchini.
