Zoodles and Chicken Sausage

Whether you’re trying to eliminate grains from your diet, or you just want to switch up your favorite noodle dishes, this zoodles recipe is a delicious substitution for pasta.


    1 tsp. extra virgin olive oil

    1/2 lbs. chicken sausage

    3 clove garlic

    1/2 c. broccoli

    1/2 tsp. red pepper flakes

    1/2 tsp. sea salt

    black pepper to taste

    1/2 c. chicken broth

    2 med. zucchini

    1/4 c. parmesan cheese


Place a large skillet over medium-high heat. Once skillet is warm, add olive oil. Next, add chicken sausage. Cook for 2 minutes on medium-low heat, breaking chicken sausage apart as it browns. Add garlic and broccoli. Season with red pepper, salt, and pepper. Add chicken broth and cook for 5-7 minutes or until broccoli is tender and chicken sausage is cooked through.

Add in the zucchini noodles and toss well to combine. Cook for 2-3 minutes or until zucchini is al dente. Remove from heat. Top with parmesan cheese and toss well. Divide chicken sausage and zoodles mixture onto 2 plates and serve immediately.
