Zesty Greek Quinoa Salad

Zesty is the perfect way to describe this. Wonderful served with grilled fish/meat of any kind.


    1 sml. zucchini

    1/4 c. fresh basil

    1/4 c. red onion

    1/3 c. feta cheese

    1 3/4 tsp. extra virgin olive oil

    14 c. water

    black pepper to taste

    7 oz. white quinoa

    2 1/2 tbsp. lemon juice

    1 lrg. tomato


Rinse quinoa in a fine mesh strainer for several minutes under cold water to remove bitter outer coating. Combine quinoa, water, and black pepper in a small saucepan over high heat. Bring to a boil, reduce heat, and simmer until all liquid has been absorbed, about 10 minutes.

Meanwhile, combine diced tomato, diced zucchini, diced red onion, olive oil, lemon juice, and chopped basil in a mixing bowl. When quinoa is done, add it to the mixing bowl. Let mixture chill for awhile before adding crumbled feta. Overall, this is best served after chilling 4 hours or longer.
