This is a modified version of a recipe from cookingquinoa.net.
1 tbsp. ground flax seeds
3 tbsp. water
1/4 c. quinoa flour
1/2 c. brown rice flour
1/2 tsp. baking soda
1/2 tsp. sea salt
2/3 c. applesauce
1/4 c. coconut sugar
1/4 c. honey, raw
3/4 c. cooked quinoa
3/4 c. muesli, organic
1/2 c. golden raisins
1/2 c. walnuts
Preheat oven to 375°F. Combine flax seeds with water - set aside Sift together quinoa flour, brown rice flour, baking soda, and salt. Place all ingredients in large bowl. In a small bowl combine applesauce, coconut sugar, and honey. Stir in flax mixture. Add wet ingredients to dry and stir well. Add cooked quinoa, muesli, raisins, and walnuts. Place on ungreased baking sheet - press cookies flat with fork. Bake for 10 - 14 minutes.
