The tanginess of the yogurt gives the perfect balance of flavor to white potatoes.
3 lbs. white or gold potatoes
3/4 c. Greek yogurt
1 1/2 c. cauliflower
1 bch. fresh chives
4 tbsp. butter
sea salt & black pepper to taste
Cover the potatoes and cauliflower with cold water (enough to cover by at least 2 inches) and add a teaspoon of sea salt. Bring potatoes and cauliflower to a boil, reduce heat and simmer until tender. Drain potatoes and cauliflower, mash with masher, and whip them with a stiff whisk. Whisk in yogurt, chives, butter, sea salt, and pepper. Serve immediately.
