Yellow Summer Squash Casserole

Yellow summer squash casserole.


    8 med. yellow squash

    1 lrg. onion

    1 tsp. garlic

    8 slc. uncured bacon

    seasoning or spices of your liking to taste


Clean and slice squash and set aside. Chop onion and saute until clear. Remove from pot and set aside. Cook bacon until well done, drain and set aside. Add squash to pot and saute slowly over medium heat. Add onions and crumbled bacon. Let cook down covered for about 2 hours until squash is very soft. Add approximately 1/4 to 1/3 c. of seasoned bread crumbs until no visible liquid. Continue to cook about 20 minutes. At this time it's ready to serve or can be placed in a casserole dish to serve at a later time.
