Wilted Spinach and Sausage Salad

A favorite! It's fast, doesn't heat up the kitchen and best of all you use only one pan! Ingredients are as natural or organic as I can get in my area.

Ingredients

    1 lbs. pork sausage

    3 tbsp. extra virgin olive oil

    1 tsp. lemon zest

    2 tbsp. lemon juice

    8 oz. baby spinach

    4 egg

Directions

In a large fry pan, cook the sausage until done, breaking it apart with a wooden spoon. Remove to a covered bowl to stay warm. Return pan to the stove and add the olive oil, lemon zest and juice. Over medium heat stir the mixture, making sure to scrape up all the brown bits (about 1 minute). Remove pan from the heat and toss in the spinach coating the leaves with the hot olive oil/lemon dressing. Add salt and pepper to taste and divide into four bowls. Top with the sausage. Finally, wipe the pan with a paper towel and fry four eggs (I like over easy so the yolk mixes into the salad). Top each salad with the egg and serve.
