I found this recipe on Food.com. Since I'm new to this, I'm not completely positive about the serving sizes, but the ingredients are all carbs and you can make the dressing separately and add it accordingly in the serving size you require which is how I've done it.
3 c. water
1/2 c. long grain wild rice
1 c. white quinoa
1/2 c. green onion
1/2 c. red bell pepper
1/2 c. cucumber
2 tbsp. coconut oil
2 balsamic vinegar
1 tsp. dijon mustard
1/2 tsp. sea salt
1/2 tsp. dried thyme
1/4 tsp. dried rosemary
1/4 tsp. black pepper
2 garlic
