It's autumn and soup sounds good!! What's easier than the crockpot!!
1 lbs. chicken breast
3 med. carrot
3 stlk. celery
1 c. sweet onion
2 clove garlic
1 1/2 tsp. sea salt
1/2 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. dried rosemary
1 bay leaf
2 tbsp. butter
6 c. chicken broth
1 c. long grain wild rice
Place chicken breasts, chopped veggies (carrots, celery, and onion) in crockpot. Add minced garlic, seasonings, bay leaf, butter, chicken broth, and wild rice. Cook on low for 4 hours.
At the end of the 4 hours, remove the bay leaf. Shred the chicken in the crockpot -OR- remove chicken, shred, and return to the crockpot. Test the rice to make sure it's done - if not, it may need more time to cook.
To serve: I measure the ounces I need for protein for my meal. Then, I measure the vegetables and rice I need for my meal. Finally, I add the desired amount of broth to the bowl to enjoy a hearty, warming soup! This recipe is so easy to make fit the servings fit your metabolism type.
