Healthier version of my mom's salmon cakes I loved as a child.
16 oz. canned salmon
2 egg
1/2 c. old-fashioned oats
1/4 c. sliced almonds
1/2 c. onion
4 tbsp. cilantro
1 stlk. celery
1 tsp. Old Bay seasoning
4 tbsp. coconut oil
Dice onions, celery, and cilantro. Mix together all ingredients except coconut oil. Form into patties and fry in coconut oil until golden brown. Enjoy warm or cold. Great as leftovers, too!
