Whitefish with Cilantro Pesto

Great whitefish entree!


    1 tbsp. extra virgin olive oil

    1/2 tsp. sea salt

    1/2 tsp. red pepper flakes

    1 tbsp. butter

    4 whitefish

    2 tbsp. lemon juice

    2 clove garlic

    2 c. cilantro


Preheat oven to 400°F (205°C). Prepare a shallow baking dish with butter.

Sprinkle the fish with lemon juice and place in the dish.

Mince garlic in a food processor or blender. Add cilantro; process until minced. Add olive oil, sea salt, and red pepper flakes; process until well mixed. (Alternatively, mince the garlic and cilantro by hand; stir in the olive oil, sea salt, and red pepper flakes until well blended.)

Spread the pesto evenly over the fish. Bake 10 minutes, or until the fish is opaque and flakes easily with a fork.

Serve hot.
