Easy scramble that is full of flavor


    1 egg white

    1 pce. uncured bacon

    1 c. spinach

    2 tbsp. fresh made salsa

    1 tsp. coconut oil


In a 400 degree oven broil bacon for 15 - 20 minutes or until crispy. In sautée pan melt coconut oil then. Add the spinach leaves and whisk whole egg and egg whites in separate bowl. Once spinach is wilted, add eggs and cook until almost done; add in (crumbled) bacon from oven and cook Neil done. Plate eggs and top with pico de gallo salsa (2 tablespoons)
