A tasty twist to salsa. Enjoy over shrimp, pork, chicken, or by itself!
1 shallots
1 tbsp. lime juice
sea salt to taste
black pepper to taste
3 c. watermelon
1 c. cilantro
1/2 jalapeno pepper
Chop watermelon into bite-sized pieces and place in a large bowl.
Finely dice jalapeno and shallot. Coarsely chop cilantro. Add all to the bowl.
Drizzle fresh-squeezed lime juice over everything in the bowl. Season with sea salt and pepper. Toss to mix well.
Serve with your favorite meat, fish, shrimp, rice... or all by itself! Enjoy!
