A delicious summer salad. A small amount of avocado may be added for creaminess, but I prefer it without. It tastes fresher without the avocado.
1 c. watermelon
1 c. cucumber
1/2 tbsp. extra virgin olive oil
1/2 tbsp. balsamic vinegar
1 tbsp. cilantro, bunch, fresh, organic
sea salt & black pepper to taste
1 tbsp. fresh basil
Chop watermelon and cucumber into bite size pieces. Chop cilantro and basil. Place watermelon, cucumber, and herbs in a bowl. Stir in oil, balsamic, salt, and pepper. Chill before serving.
