This tender delicious recipe is perfect for a family with kids. Mine devoured it! My eleven year old claims that the walnut and Parmesan combination is "mouth exploding."
4 tilapia
1 c. walnuts
1 c. parmesan cheese
4 tsp. coconut oil
Preheat oven to 425ºF. Line a baking sheet with parchment paper.
Rinse fillets, and place on parchment paper.
Grind walnuts and Parmesan together (I used my coffee grinder). Place walnuts and Parmesan in a bowl (or in a plastic bag if you prefer). Add whatever spices/herbs you like to the mixture.
Coat fillets with the mixture however you choose. (I just crumbled it on top of the fillets and pressed down to make a nice layer.)
Drizzle about a teaspoon of coconut oil on top of each filet (works best in liquid form).
Bake for 12-15 minutes. Remove from oven and let sit for 5 minutes to finish cooking.
