This is a recipe from famed chef Aida Mollenkamp. These are very filling and so satisfying. I LOVE making these for the family. So delicious! Enjoy :) **Please note that the serving information for the proteins, fats, and carbs is based on 1 serving of the smoothie.
1 c. walnuts
1 c. Greek yogurt
3/4 c. date
1 tsp. vanilla extract
1/4 tsp. cinnamon
1 c. ice
4 oz. walnuts
3 c. water
1 tbsp. honey, raw
1 tsp. vanilla extract
1 pinch sea salt
SMOOTHIE: -Combine FIRST FIVE ingredients listed above in the carafe of a blender and blend on high until the dates are broken up and the mixture very smooth, at least 1 minute. -Add the 1 cup of ice and blend briefly on high until ice is just broken up. Pour into chilled glasses and serve immediately.
WALNUT MILK: (This makes 4 cups!) -Place 4 oz of walnuts in a bowl and cover with water. Cover with plastic wrap and set aside at room temperature to soak at least 1 hour to 12 hours (this helps make them blend smoother). -Drain walnuts and rinse thoroughly. -Combine the walnuts, 3 cups water, honey, vanilla, and salt in the carafe of a blender then blend on low until very smooth, at least 2 minutes. -Serve as is, or if you desire a smoother milk, pour through cheesecloth or a coffee filter to strain. (Will last up to 5 days in the refrigerator.)
