I keep in the refrigerator and pull out for breakfast or to mix in Greek yogurt. My family loves it to munch on!
2 c. old-fashioned oats
1 c. walnuts
1/2 c. sunflower seeds
1/4 c. pine nuts
1 tbsp. cinnamon
1 c. honey, raw
1/2 c. coconut sugar
2/3 c. butter
Preheat oven to 300°F. Line a large baking pan with parchment paper. Set aside.
In a large bowl, combine oats, chopped walnuts, sunflower seeds, pine nuts and cinnamon.
In a medium pan over low heat, stir honey, coconut sugar, and butter until combined. Pour over oat mixture and toss gently.
Spread mixture in a thin layer in the lined baking pan. Bake for about 20 minutes, then flip granola; bake 15 additional minutes. Be careful not to burn the granola. Turn off oven and let granola rest for about 10 minutes. Transfer pan to a wire rack to cool. Break granola into pieces.
Store in refrigerator in a sealed container.
