Yummy, light, and fluffy chocolate cake/brownie.
14 1/2 oz. canned black beans
3 egg
1/4 c. honey, raw
1 c. almond butter
1/2 c. cacao powder
1/2 tsp. baking soda
1 tbsp. vanilla extract
sea salt to taste
cayenne pepper to taste
2 oz. chocolate
1/3 c. coconut oil
Preheat oven to 350ºF. Grease a 9x9 baking dish with a little coconut oil.
Combine black beans (drained and rinsed), eggs, and honey in a blender. Blend until smooth.
Melt coconut oil and almond butter in a double boiler.
Combine bean mixture, coconut oil and almond butter mixture, cacao powder, baking soda, vanilla, salt, and cayenne (optional). Stir to mix well. Stir in dark chocolate (cut into chunks), and pour mixture into greased baking dish. Bake for 20 minutes.
