Veggie-Packed Meatloaf

Meatloaf jam-packed with a variety of vegetables.


    2 tsp. avocado oil

    1/2 med. onion

    1 c. white mushrooms

    4 c. spinach

    1 lbs. ground beef

    1 med. carrot

    2 egg

    2 tbsp. coconut flour

    1 tsp. sea salt

    1 tsp. black pepper

    1 tsp. onion powder

    1/2 tsp. garlic powder

    1/2 tsp. dried thyme


Preheat oven to 375ºF. Grease a loaf pan.

Heat avocado oil in a skillet over medium heat. Add diced onions and mushrooms; sauté until onions are translucent. Just before onions are done, add chopped spinach to the skillet. When spinach is wilted, remove vegetables from heat. Let cool.

Combine ground beef, grated carrot, lightly beaten eggs, coconut flour, and spices in a large bowl. Add cooked veggies. Use hands to combine, but be careful not to overmix.

Move meatloaf mixture to loaf pan, and bake for 45 minutes to an hour.
