Veggie and Bacon Frittata

All of the breakfast staples in one dish!


    4 pce. uncured bacon

    2 c. white or gold potatoes

    1 c. broccoli

    1/2 c. green bell pepper

    1/2 c. red onion

    7 egg

    3 tbsp. water

    1/4 tsp. sea salt

    1/8 tsp. black pepper

    1/2 tbsp. coconut oil


In a large skillet, cook the bacon until crisp. When cooked, remove bacon and set on a paper towel. Drain the grease, keeping 2 tablespoons of it in the skillet. Add the shredded potatoes, finely chopped broccoli, chopped green pepper, and chopped onion to the skillet. Saute over medium until potatoes are golden brown and vegetables are tender, about 7-10 minutes. Remove from heat and set aside.

In a large bowl, whisk eggs, water, salt and pepper. Grease a 9 inch pie pan with coconut oil and transfer the potato mixture into it. Pour egg mixture over the potato mixture. Chop the bacon and sprinkle it on top of the eggs. Bake, uncovered at 375°F for 20 minutes, or until eggs are set.
