Vegetable Frittata for one

A quick breakfast or anytime meal


    1 c. diced tomatoes, fresh

    1 tbsp. coconut oil

    1 egg

    sea salt to taste

    1 tsp. black pepper

    2 tbsp. milk, raw or organic


You will need a small frying pan ( about 6"across bottom) A lid for the pan. A pancake turner. Saute the veggies in the coconut oil until done using a medium setting on the stove. In a small bowl mix the egg with the milk and seasonings with a fork until frothy. Pour the egg mixture over the veggies and put a lid on the pan. Turn the heat to a simmer for about 3 minutes or until the egg mixture is no longer liquid. Take off the lid and let it stand for a minute to let the steam evaporate and transfere to a dish. Enjoy your healthy breakfast or lunch.
