Vegetable Balls with Ham

This can be a breakfast or dinner idea. My mom used to make it for me when I was a kid and I love it until today!


    2 1/2 oz. ham

    2 white or gold potatoes

    1 med. carrot

    1 sml. onion

    1 egg

    1 tbsp. spelt flour

    1 tbsp. fresh parsley

    1 tbsp. fresh dill weed

    sea salt & black pepper to taste


Grate peeled potatos, onion and carrot. (I grate at first potatoes, squeeze them out in another bowl and wait until starch will be separated from the juice and then add starch back to grated potatos). Add egg, dill and parsley; salt, pepper to taste and mix everything well. Add flour and finely chopped ham (ham is optional). I like to eat these balls with a sauce made out of plain yogurt and added dill.

Cooking instructions: scoop with a spoon, form cakes and fry with coconut oil 3-4 minutes on each side on medium heat until they are golden (if heat is higher the balls should be crispy, if lower and cover pan with a lid then they should be soft).
