Vegan Truffles

So simple and so delightful. Try adding flavorings like rum, vanilla, coffee, or raspberry. Try dusting them in different ingredients like unsweetened coconut flakes, cayenne powder, or finely chopped nuts. They are perfect by themselves or they are the perfect backdrop for whatever flavors your palette delights in!


    1/4 c. coconut flakes

    3/4 c. cashews

    3/4 c. water

    2 3/4 c. chocolate

    1 tsp. cacao powder


Put cashews and cold water in a blender and blend at high speed for 1-2 minutes (yes, a long time).

Scrape the sides down and blend again until the mixture is the consistency of heavy cream.

Meanwhile, in a double boiler heat the chocolate until it's all melted.

Cool the chocolate until it's comfortable to work with and fold in the cashew cream (making sure not to stir too fast or you'll create bubbles).

Cool in the fridge for 2 hours or until set.

Take out a small ball, roll in cocoa powder and coconut shavings and store in fridge/freezer. Repeat until done. This recipe should make about 50 truffles. Enjoy!
