Val's Spinach & Mushrooms

Easy, fast and delicious!


    1 pinch sea salt

    1 bag baby spinach

    1 lbs. cremini mushrooms

    1 tbsp. extra virgin olive oil

    2 tbsp. butter

    1 garlic

    1 pinch cayenne pepper

    1/4 c. fresh basil


Heat large skillet that has cover Add enough olive oil to make a 4" puddle in the pan Gently saute the garlic until softened, about 30 seconds Add the mushrooms (whole with stems trimmed) Turn up the heat a little and stir-fry for 1 minute., adding seasonings & butter to the middle of the pan Add spinach and DO NOT SEASON, or it will be too salty! Cover and let wilt for 30 seconds...NO MORE! Turn off heat and keep covered for another 30-60 seconds.

Serve immediately. This can be done at the last minute when your main dish is complete if you have all your ingredients ready. Try this with my Baked's pretty awesome. ;-)
