Val's Baked Salmon

A perfect marriage of Mediterranean & Scandinavian


    1 whole salmon

    4 clove garlic

    1/4 c. fresh dill weed

    1 sea salt

    1 lemon pepper seasoning

    1 lemon

    2 tbsp. extra virgin olive oil


Preheat oven to 325 degrees Line 9 X 11 Roasting/Baking Pan with Heavy Duty Aluminum Foil Drizzle a couple tablespoons of olive oil into pan and spread around with fingers Place salmon filet, skin down in pan and insert quartered garlic cloves at 2-3" intervals Sprinkle with fresh dill, salt, lemon pepper Cover tightly with foil Bake for approximately 45 minutes (time may vary according to size of filet) Turn filet over and peel back skin. Use same seasonings as the top side & replace skin Bake uncovered (or with the foil as a tent) for another 15 minutes, with heat turned up to 375

Serve with lemon wedges for garnish and my Spinach & Mushrooms and a carb of your choice if you wish!
