Twice Baked Potatoes

A healthy, filling side to any dinner. You can add as much of the add-ins as you want, or add whatever you want. Keep in mind that the more you add, the harder the potatoes will be to stuff and you may have some leftover.


    1 white or gold potatoes

    1/2 c. shredded cheese

    1 green onion

    1 tbsp. uncured bacon


Bake potatoes as per usual. Let potatoes cool enough to handle (I find putting them in the fridge or freezer works great. In a bowl, mix together the grated cheese, green onions, and bacon bits. Once the potatoes have cooled slightly, carefully cut them in half and scoop out the flesh. Try to leave the skins intact. Add the potato innards to the these mixture and mash well with a fork. Spoon mixture into the potato skins, packing it tightly. Put all the potatoes on a plate and microwave or bake just long enough to melt the cheese (about 3 minutes in the microwave). Serve and enjoy!

Note: Bacon bits can me made by simply cutting up a package of bacon (scissors work fine) and frying them in a frying pan until they're well-done. Season if desired.
