Delicious easy meatballs full of flavor!
2 clove garlic
1 med. yellow bell pepper
1 1/2 spg. fresh rosemary
1/2 c. red onion
2 egg
1/2 c. almond flour
sea salt & black pepper to taste
3 tbsp. coconut oil
6 oz. tomato sauce
1 c. chicken broth
1 lbs. ground pork
Combine garlic, yellow pepper, red onion, and fresh rosemary in a food processor; pulse a few times to chop everything up. Move to a medium bowl. Add ground pork, almond flour, eggs, sea salt, and pepper to the bowl. Use a wooden spoon or your hands to mix well. When everything is well combined, form mixture into meatballs.
Heat coconut oil in a large pan over medium heat. Add meatballs to the pan and brown (approximately 5-10 minutes). Add tomato sauce and chicken broth to the pan and cook approximately 20-30 minutes. Add more broth as needed to ensure liquid does not burn.
