Want to prep this in advance? Make a big batch of the taco/veggie mixture, and pull it out whenever you're ready to add lettuce and avocado for a tasty salad.
1/2 lbs. ground turkey
1/2 med. red bell pepper
1/2 med. green bell pepper
2 tbsp. onion
2 clove garlic
1 c. fresh made salsa
2 tsp. chili powder
1 tsp. ground cumin
2 c. romaine lettuce
1/2 med. avocado
Combine ground turkey, chopped bell peppers and onions, and minced garlic in a skillet over medium-heat, breaking the turkey up as it cooks, until the turkey is cooked through and veggies are tender. Stir in salsa, chili powder, and cumin; heat through. Divide romaine lettuce between two plates, and top each with half of the turkey mixture. Top with chopped avocado.
