Turkey Spinach Over Brown Rice

Easy one skillet supper.


    2 tbsp. coconut oil

    1 lbs. ground turkey

    sea salt & black pepper to taste

    2 c. chicken stock

    5 oz. spinach

    15 oz. cannellini beans

    1 c. brown rice


Cook the 1 cup of dry brown rice according to the instructions. Heat the oil in a large skillet over moderatly high heat until hot but not smoking. Add the ground turkey and using a wooden spoon break up the clumps and cook until brown for 4-5 min. Season with salt and pepper. Add the stock and scrape up any bits on the pan. Bring to a boil then let simmer until slightly reduced about 10 min. Stir in the spinach and the cannilleni beans and heat through. Season with salt and pepper. Serve over brown rice.

Try adding some red pepper flakes to the turkey for a little spice.
