Turkey Sausage and Broccoli Egg Muffins

Another delicious take on the classic egg muffin.

Ingredients

    1 lbs. Italian turkey sausage

    2 c. broccoli

    1 oz. cheese, any type

    6 egg

    2 tbsp. canned coconut milk

    1 tsp. dried basil

    1/2 tsp. fresh chives

    1 tbsp. dried onion flakes

    sea salt & black pepper to taste

Directions

Cook and slice turkey sausage. Set aside slices.

Steam broccoli. Top with one ounce of your favorite cheese. Set aside.

Lightly beat 6 whole eggs. Add coconut milk. Add spices. Mix well.

Grease 12 cups of a muffin tin with coconut oil. Add 2 or 3 broccoli florets to each cup until you have filled them all. Add approximately 2 turkey sausage slices to each cup. Pour egg mixture evenly over broccoli and turkey sausage slices. Bake for 20-30 minutes at 350ºF.
