Turkey Meatloaf Muffins

Hidden veggies are a healthy surprise in these muffins!


    1 med. carrot

    1/2 med. zucchini

    1 lbs. ground turkey

    1 egg

    1/4 c. almond flour

    1 tsp. onion powder

    1/2 tsp. garlic powder

    1/2 tsp. sea salt

    1/2 tbsp. coconut oil


Shred carrot and zucchini.

Using hands, mix all ingredients, except coconut oil, together in a bowl until thoroughly combined.

Grease muffin pan with coconut oil. Divide mixture into 8 muffin cups. Bake at 350ºF for 30 minutes. Top with mashed potatoes or cauliflower and enjoy!

Note: If you are replacing the egg with a flax egg, grind flax seeds and mix with water in a small bowl to create a flax egg. 1 flax egg = 1 Tbsp ground flax seed + 2 Tbsp water.
