These meatballs are infused with so much flavor because they cook in enchilada sauce.
1 lbs. ground turkey
1 egg
4 1/2 oz. canned diced green chilies
3/4 c. almond flour
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 c. pepper jack cheese
10 oz. green enchilada sauce
Combine ground turkey, egg, chopped green chilies, almond flour, chili powder, ground cumin, and shredded cheese in a bowl. Use hands to mix until fully incorporated. Form mixture into 15 meatballs, and arrange on a baking sheet lined with parchment paper.
Turn broiler to high, and place meatballs in the oven. Broil for 5-6 minutes, turn the meatballs, and broil for another 5-6 minutes, until meatballs are lightly browned.
Move meatballs to crockpot, and pour enchilada sauce over them. Cook on low for 2 hours, until meatballs are cooked through.
